This Chocolate Brownie Cookies recipe is the ultimate cookie recipe and the only one you’ll ever need!
Here’s how it happened: Chloé wanted me to make chocolate cookies and I had this huge craving for brownies. And then it dawned on me: Chocolate Brownie Cookies! I must say this was the best idea I had had in a long time. It’s that good, a perfect cross between fudgy brownie-ness and chewy chocolate chip cookie. They are totally rich and decadent so the cookie size is ideal. I served them yesterday to Chloé, my godson Lucas and his little brother, and let me tell you that I made those 3 little kids very happy, Lucas kept on saying “C’EST BON C’EST BON C’EST BON!” (it’s so good!), it was really adorable! They did have their faces covered with chocolate after, which I think is a true sign of a great chocolate recipe!!!
Using a good quality chocolate for the chocolate chip brownie cookies is important here, you won’t regret it.
- 225 g semisweet chocolate, chopped
- 2 tablespoons unsalted butter
- 2 large eggs, at room temperature
- ½ cup sugar
- ½ teaspoon pure vanilla extract
- ⅛ teaspoon salt
- ¼ cup all-purpose flour, sifted
- ¼ teaspoon baking powder
- ¾ cup semisweet chocolate chips
- Melt chocolate and butter in a medium bowl set over a saucepan of simmering water, about 5 minutes.
- In a large bowl, beat eggs and sugar using an electric mixer, until mixture is thick and white, about 5 minutes. Beat in vanilla and salt.
- Using a spatula, fold in egg mixture into chocolate, then flour and baking powder. Add chocolate chip and mix well.
- Transfer batter into a shallow baking dish, cover and freeze for at least 1 hour.
- Preheat oven to 350° and line 2 baking sheets with parchment paper.
- Spoon 2-tablespoon-size mounds of dough per cookie and place on the baking sheets, spacing cookies about 2 inches apart.
- Bake for about 10 minutes, until the cookies are dry around the edges and cracked on top.
- Let cool on the baking sheets for 10 minutes, then transfer to a rack to cool completely before serving.
