“Mommy, you’ll be Anna and I’ll be Elsa ok?” OMG…not Frozen again!!!!!!!!!!!!! Quick, I need a way out…” Chloé, do you want to make chocolate chocolate-chip muffins instead? You can eat some chocolate chips while we make it if you want!” I admit it, I’m a bad parent, the kind of mom who gets bored out of her mind playing dolls so I’m always pretty quick to propose cooking as an activity. It works most of the time!!! And she loves it too, it’s so cute the way she runs to get her little apron and her cooking mitts! And for me, cooking with her is truly one of my favorite things in life because not only do I love sharing my passion with her but I want her to understand and be interested in food. I try to find recipes that are quick and easy and if it happens to involve chocolate, I know I have a winner!
But to be honest, these chocolate chips muffins are more like chocolate cake, not breakfast material if you know what I mean–but they are delicious and can be made in a flash.
- 1¾ cup all-purpose flour
- 2 tsp. baking powder
- ½ tsp. baking soda
- 2 tbsp. good quality cocoa powder
- ¾ cup superfine sugar
- ¾ cup semisweet chocolate chips, plus ¼ cup for sprinkling
- 1 cup milk
- ⅓ cup plus 2 tsp. vegetable oil
- 1 egg
- 1tsp. pure vanilla extract
- Preheat your oven to 400 F
- Put the first 5 ingredients in a large bowl plus ¾ cup chocolate chips
- Stir all the liquid ingredients in a measuring cup
- Pour the liquid ingredients in the bowl and mix (it's ok if it's a bit lumpy)
- Arrange paper muffin cases in your muffin tin
- Spoon your muffin mixture in the paper muffin cases
- Sprinkle the remaining ¼ cup chocolate chips over the muffins
- Bake for 20 minutes or until the muffins are dark, risen and springy
