This is the salad I make the most in the summer, I just love it! A Fattoush Salad is a Middle Eastern salad made with juicy tomatoes, crunchy cucumbers, lots of fresh herbs like mint and parsley and topped with pita chips for croutons. But what gives really its distinct flavor is the combination of lemon, pomegranate molasses and sumac which really packs a punch. Pomegranate molasses, a key ingredient of Middle Eastern-Mediterranean cooking, is not really molasses at all but a fruit syrup made by cooking down the juice of pomegranates with lemon juice and sugar. Sumac on the other hand is a dark red ground powder with a tart lemon taste and is used mostly in Middle Eastern cooking.
This salad is part of my favorite go-to meal when I have to feed a crowd, I serve it as a side dish to my Shish Taouk Chicken Kebabs and my Lebanese Vermicelli Rice.
- Salad
- 1 romaine lettuce, trimmed, cut crosswise into ¾" strips
- 3 medium tomatoes, chopped or 3 cups medium cherry tomatoes, halved
- 4 Lebanese cucumbers, thinly sliced crosswise
- ½ cup flat-leaf parsley, chopped
- ½ cup mint, chopped
- 3 green onions, thinly sliced
- ½ cup crumbled feta cheese
- 2 pitas, brushed with some olive oil and salt, toasted until golden brown, broken into bite-size pieces
- 1 tbsp. sumac
- Dressing
- 3 tablespoons lemon juice
- 2 tablespoons pomegranate molasses
- 2 teaspoons white wine vinegar
- ½ teaspoon dried mint
- ¾ cup olive oil
- Kosher salt
- Dressing
- Put all the ingredients in a blender and blend until smooth.
- Salad
- In a large bowl, combine all the ingredients except pitas.
- Add ½ of dressing; toss to coat, adding more dressing by tablespoonfuls as needed.
- Add pita and toss.
- Sprinkle sumac over.
