Ever since I made that White Chocolate Mousse with Strawberry Pepper Sauce, I’ve been obsessed with mousse! I decided that the next one I would try would be a Strawberry Mousse so I started researching all my favorite food websites for the perfect Strawberry Mousse recipe. All I was finding were recipes with cream and I was hoping for something lighter. Well, ask and you shall receive…my daughter came back from the neighbours this week with a book of yogurt recipes that my lovely neighbour was giving to me. Guess what was on the cover of the book? A Low-Fat Strawberry Mousse! It was clearly a sign that I had to make it! And it is perfect: light, not too sweet and the flavor of the strawberries really comes through. And you know what? It’s under 200 calories! Really!
- 200g (7 oz) strawberries, stems removed and sliced
- 125 ml (1/2 cup) sugar
- 4 egg whites
- 250 ml (1 cup) plain Greek yogurt
- Strawberries for garnish (optional)
- Put the strawberries in a food processor (or blender) and pour sugar over it. Let stand 10 minutes. Puree and set aside.
- Beat egg whites until firm.
- Mix strawberries with Greek yogurt until smooth.
- Fold in the egg whites in the yogurt mixture.
- Pour mousse in 4 glasses or ramekins.
- Put in the refrigerator at least 4 hours.
- When ready to serve, garnish with strawberries if using.
