Talk about the perfect antidote to cold January days!!! I’ve been having this every morning for the last 3 weeks and I’ll tell you it’s a great way to kick-start your day. You can feel the vitamins running though your veins! You can’t really taste the spinach and the combination of pineapple and mint is completely refreshing and delicious.
I use orange juice as the base here but you can replace that with coconut water or 1/2 orange juice 1/2 coconut water.
I often make a huge batch and freeze individual ziplocs and I just take it out the night before to have a great juice in the morning without having to wake up the entire house with the blender! Yes it’s always better freshly made, but some weeks are crazy and it’s a great way to save time in the morning and enjoy a great smoothie!
- 1 cup pineapple, diced
- 1 big handful of spinach
- 2 cups orange juice (or half orange juice, half coconut water or half orange juice and half water)
- 10 mint leaves (more if the leaves are small)
- Put all the ingredients in the blender.
- Blend on high until very smooth.
- Pour into 2 glasses.
- Enjoy!
