In this back-to-school season, I’m really into quick and easy dinners and this Sausage with Balsamic Onions and Grapes recipe is a perfect weeknight solution. The combination of sausages and grapes is a bit unusual for North Americans but it’s a classic in the Italian tradition and the use of caramelized onions and balsamic vinegar here makes it just plain delicious. I discovered this recipe a few years ago and since then it has become a regular on my weekly dinners rotation because it has all the qualities I look for in a weeknight recipe: quick & easy, preparation in under 15 minutes and few ingredients (only 6!).
I like to serve this over mashed potatoes, like an Italian version of Bangers and Mash! Even more special, add some parmesan to your potatoes: the combination of flavours is divine. Comfort food at its best!
- 3 tbsp. olive oil
- 4 sweet italian sausages (or 8 if sausages are small)
- 1 large onion, thinly sliced
- ½ cup homemade or low-salt chicken broth
- 2 tbsp. balsamic vinegar
- 20 seedless red grapes, halved
- In a large skillet, heat 1 tbsp. of oil over medium-high heat. Add sausages and cook until they're browned all over, about 8 minutes. Transfer to a large plate (they won't be fuly cooked, it's ok, they will braise later).
- Add the remaining oil to the skillet and then your onions with ½ tsp. of salt. Cook the onions stirring occasionally until they turn light brown, about 7 minutes.
- Add the chicken broth and balsamic vinegar and scrape the skillet to deglaze. Reduce heat to low.
- Ad sausages and grapes, cover your skillet with the lid ajar and cook until the sausages are cooked through, about 25 minutes.
- Serve over mash potatoes.
