This is a great discovery that really came out of the blue! I recently bought white chocolate for another recipe and forgot that I bought it and bought some more! I also happened to buy fresh strawberries that I ALSO forgot about…not too sure what’s wrong with me these days!!! Anyhow, I was stuck with more white chocolate than my pantry ever saw and a ton of strawberries about to go bad. I was having guests, so I looked for a dessert recipe that combined white chocolate and strawberries and I found this one. The addition of pepper in the strawberry sauce was really appealing to me. Well, this recipe is truly great, not too sweet, and the addition of lime rind to the white chocolate mousse is out of this world! The pepper in the strawberry sauce gives it an unexpected kick! This is what I call a KEEPER!
- White Chocolate Mousse
- 200 g (7 oz) white chocolate, broken into pieces
- 1 lime, grated rind only
- 2 eggs, separated
- 2 tbsp. white rum
- 150 ml 35% cream
- Strawberry and Black Pepper Sauce
- 50g sugar
- 75 ml water
- ½ tsp. black pepper, roughly crushed
- 225 g fresh strawberries, hulled and sliced
- ½ lime, juice only
- Few strawberries to decorate (optional)
- White Chocolate Mousse
- Melt chocolate in a bowl set over a pot of simmering water (make sure the bottom of the bowl doesn't touch the water), stirring occasionally.
- Put the bowl aside and add the lime rind, the egg yolks and the rum and mix until combined and smooth.
- In another bowl, whip the cream until you have soft swirls and then fold into your chocolate mixture.
- Pour into 4 glasses and set aside in the fridge for at least 3 hours.
- Strawberry and Black Pepper Sauce
- In a medium pot, add sugar, water and pepper, stir over medium heat until sugar is dissolved and simmer for 3 minutes. Add strawberries and lime juice and cook for another 2 minutes. Set aside and let cool.
- Pour the strawberry sauce into a blender and puree until smooth.
- Pour the sauce over the chocolate mousse just before serving.
